Poulet Sans Tête – a rotisserie chicken delivery spot which operates out of West Village restaurant Left Bank – has expanded with a sit-down restaurant at 590 Amsterdam Avenue, between 88th and 89th streets.

Menu options include whole and half chickens (respectively $27 and $17), boneless platters with a variety of sides to choose from ($21 lunch platter, $26 dinner platter), five sauces at $2 a piece, and a chicken sandwich ($16).

Sides range from $5 to $16, with noteworthy items including Poulet’s Spiced Rotisserie Cauliflower, potatoes “roasted in the drippings from the chickens and topped with Maldon salt,” and their Chicken & Vegetable Soup.

Chef Laurence Edelman and Micheline Gaulin opened Left Bank in 2011; seven years later, they launched Poulet Sans Tête out of its kitchen.
Edelman’s close connection to the UWS made it an easy choice for PST’s first sit-down location. He worked as a chef at the Mermaid Inn on Amsterdam Ave for four years, and he also got married there. Interesting side note: During the pandemic, Mermaid Inn also launched a chicken delivery business out of its now-closed UWS outpost. It was called Mermaid Bird.
While he was raised in Jersey, Edelman’s aunt and uncle lived on 77th between CPW and Columbus. “I’d stay over at their apartment all the time. Especially the night before the Thanksgiving day parade. We’d watch the floats get blown up. That was the early 80s. You could still walk right up to Underdog. Columbus Ave in the 1980s is New York to me. Zabar’s, Barney Greengrass, The Museum of Natural History; the Upper West Side, to me, is New York. It’s how I was raised. My parents moved back to the Upper West Side about 11 years ago.”

He also saw opening on the Upper West Side as a smart business decision (even though another rotisserie chicken place opened pretty recently). PST’s website describes the chickens as “happy and healthy,” and Edelman adds that they’re “big and flavorful,” stating that “You can easily get five meals out of one chicken. In short, it’s great for families. It’s simple, well seasoned, fresh food; and easy to do for a family dinner.”
Counter seating is available on a first come, first served basis. Delivery and pickup is available as well. The official opening date is Tuesday, April 4; they are currently onsite working out the kinks.

A lot for a chicken but I want to try the sandwich with broccoli rabe. That looks good.
